We fermented Petite Sirah and Cabernet Sauvignon in these large white bins this year. After the grapes are de-stemmed, the whole berries get pumped into the bins. During fermentation, the skins rise to the top forming what is called the “cap.” Two or three times a day, we “punch” the skins back down into the juice attempting to maximize contact.
